Labor Day is around the corner and I have been experimenting with ways to make the classic Labor Day party food a bit more interesting. I get bored serving the same old stuff year after year.
With this recipe, I took the typical super simple ‘from a seasoning packet’ onion dip to the next level with caramelized onions. They add a slight sweetness and a real depth of flavor, sans the packet.
With a few more minutes of prep time, you can have a classy dip that you would be proud to serve.
All of the ingredients ready to go.

I miss Mexico. I got that bowl there last summer. I would love to be on the beach in Cabo right this very minute!
Yes, those are Sour Cream & Cheddar Ruffles. If I was a better woman, I would have served this with classier additions like crudites or even pita chips but I doubt it would have tasted as good. Enjoy!

Caramelized Onion Dip
1 onion, diced
2 cloves garlic, minced
1 cup sour cream
½ cup of mayonnaise
¼ cup scallions, diced
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon of smoked paprika
Salt & Pepper
Over medium high heat, add oil and swirl to coat. Add in onions and a dash of salt and pepper. Once onions have caramelized to a golden brown, remove from heat and let cool.
In a bowl mix the remaining ingredients reserving some green onions. Mix until well combined, then fold in the caramelized onions. Add to a serving dish and top with the remaining green onions.
