Once and awhile I get a chance to spend some leisure time in the kitchen without the pressure of trying to get food on the table or a blog recipe written and shot. This recipe was born out of one of those amazing mornings. My sister and brother-in-law came over and we just hung out in our pajama’s, drank coffee and had an relaxing morning eating these delightful little creations.
These are incredibly easy and they look pretty special, perfect for a breakfast or brunch gathering for a crowd. Serve with your favorite accompaniments – I chose bacon and potatoes. I hope you get to try these out soon!

PRINTRECIPE
Easy Baked Eggs in Cream
5 tablespoons of butter
8 tablespoons of heavy cream
8 eggs
1 tablespoon chives or scallions, finely chopped
salt and pepper
Heat oven to 400 degrees. Coat four small (4 ounce) ramekins with 1 tablespoon of butter. Place 1 tablespoon of butter in each ramekin followed by 2 tablespoons of cream and two eggs per ramekin. Season with salt and pepper to taste.
Place ramekins on a baking tray until the whites are set, 10 – 12 minutes. Remove from the oven and let cool slightly. Sprinkle chopped herbs on top of each ramekin and serve.
