I’m having a hard time keeping up with my tomato plants these days.
I’m growing three varieties – Sweet 100’s, Roma and Celebrity. I’m loving the variety but they are really cranking them out. So, this weekend as I was out picking tomatoes, I decided that I needed to come up with interesting ways to eat them. Hence the genesis of this recipe.
It’s extremely easy and can be adjusted to eat as a snack or an appetizer when entertaining – there is nothing better than sharing things you have labored over with friends.
Feel free to make changes – swap the cheese, add different herbs or vinegar, whatever you want.

Toss in the tomatoes and make sure they are well covered.

Sunkissed Tomato & Goat Cheese Toasts
1 pint cherry or grape tomatoes, sliced
3 cloves of garlic, minced
½ shallot, finely diced
1 tablespoons lemon juice
½ teaspoon balsamic vinegar
1 tablespoon basil, chiffonade
½ teaspoon sugar
¼ cup good extra virgin olive oil
Pinch chili flakes
Salt
Pepper
10 – 12 ½ inch thick baguette slices, toasted
Goat cheese, for spreading
In a medium bowl, add the garlic, shallot, lemon juice, vinegar basil, sugar, chili flakes and olive oil. Whisk in olive oil. Fold in sliced tomatoes to make sure they are well covered. Salt and pepper to taste.
Slice the baguette and grill or toast it until crispy but still tender in the center. Set aside on a serving platter. Spread a small amount of goat cheese on each toast.
Spoon the tomato mixture over each slice. Serve immediately.
