Cinnamon Sugar Churro Cake Balls

  • Cake Balls
  • 1 box of yellow cake mix, prepared according to directions
  • 2 tablespoons of cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon cardamom
  • Buttercream Frosting
  • ½ cup of butter, room temperature
  • 4 cups powdered sugar
  • 5 tablespoons cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • ½ teaspoon cardamom
  • Toppings
  • 2 bags of white chocolate chips
  • ¼ cup vegetable oil
  • ½ cup sugar
  • 4 tablespoons cinnamon
  • 1 teaspoon cardamom
Instructions
  1. Preheat the oven to 350 degrees.
  2. In a medium mixing bowl, take the prepared yellow cake mix and add the spices to it. Mix until combined and bake in a 13x9 pan according to the directions on the box. Remove from the oven and let cool.
  3. In a large bowl prepare your buttercream frosting. Beat butter until light and fluffy add in powdered sugar slowly and mix on low speed until combined. Add in cream, vanilla and spices and beat until light and fluffy. Take cooled cake and crumble into buttercream. Mix well. With a small cookie scoop, scoop out uniform balls and place on a parchment lined baking sheet (or use two smaller ones in order to fit them in the freezer). Freeze for at least one hour.
  4. Meanwhile, in a small bowl mix ½ cup of sugar, cinnamon and cardamom and set aside.
  5. About 20 minutes prior to removing from the freezer begin your white chocolate preparation. In another medium microwave safe mixing bowl, add the two bags of white chocolate chips and vegetable oil and heat in microwave in 20 - 30 second bursts stirring in between each until chocolate is fully melted and glossy. Do not overheat.
  6. Take each cake ball and dip in the chocolate allowing the excess to drip off. Return to parchment lined baking tray and sprinkle with cinnamon sugar mixture repeating until all the cake balls are covered. Chill until ready to serve.
