ANZAC Biscuits

Ingredients
  • 1 cup all purpose flour
  • 1 cup brown sugar
  • 1¼ cup shredded, sweetened coconut
  • 1 cup rolled oats
  • 1 stick of butter
  • 2 tablespoons boiling water
  • ¼ cup golden syrup
  • ½ teaspoon baking soda
Instructions
  1. Heat the oven to 325 degrees.
  2. In a large bowl mix flour, sugar, coconut and rolled oats and set aside. In a small saucepan, add butter, golden syrup and water and heat on medium high until the butter is just melted. Carefully, stir in baking soda and then immediately pour into dry mixture. Mix until just combined.
  3. With a cookie scoop, drop cookies onto a parchment lined baking sheet. Gently push down with the back of a fork. Bake in the oven for 20 minutes, remove and let cool on baking sheets for 10 minutes before placing on a wire rack to cool completely.
